test: Refactor WebSocket events test with improved mocking and callback handling

- Simplify WebSocket event callback management
- Add getter/setter for WebSocket event callbacks
- Improve test robustness and error handling
- Update test imports to use jest-mock and jest globals
- Enhance test coverage for WebSocket client events
